When the target appears, the first move you make should be lateral. Yes, you will eventually have to get the gun up to your face, but a lot of shooters have the overwhelming tendency to bring the gun vertical to the target line first and then move laterally. When this happens, the bird closes quickly (occlusion), and the shooter ends up chasing, usually in a panic, to catch up.
